Deep pink in color, this is a cherry-scented rosé with full pinot noir flavors. The texture is broad and round, its edges defined by pink grapefruit pith acidity.
There’s gentle chalkiness to the dry finish, making this appealing to drink now with salmon tartare. It should develop more depth of flavor with bottle age. (12/2010)

62% Pinot Noir, 8% Meunier, 15% Chardonnay, 15% red wine, all from Bouzy. Winemaker Dominique Demarville has been investing considerably in red wine production facilities. Confident pale rose colour. Very racy, crackling, pacey wine with an attractively refreshing green streak. I tasted this wine immediately after Dom Pérignon Rosé 2003 and it withstood the comparison well, albeit in a completely different style and considerably more advanced in its evolution. There is lovely energy to this wine which certainly could be enjoyed without food, even if Demarville likes it with lobster, lamb and even beef. Quite persistent. 17.5/20 points.
