Controlled maceration and fermentation in large American oak barrels , 10 month maturation in French Allier barrels. This cherry/violet hues colored powerful wine fumes cassis and liquorice and enters the mouth like velvet drown in in ripe red berries with a hint of toffee. Pairs really well with musrooms and artichoke.
